Method
• Strawberry dressing: Place the strawberry vinegar in a bowl, and then slowly add the olive oil, stirring with a whisk until the oil and vinegar combine. Season with salt and pepper.
• In a separate salad bowl add washed baby spinach, toasted almond flakes, finely sliced dried figs and the shaved parmesan. Lastly, pour on the strawberry dressing, and gently mix through.
Note: Strawberry vinegar can be replaced with raspberry vinegar which is readily available at most supermarkets.
